I love anything mini! I just feel like they are so much cuter! You can make your own cake mix if you want, or yellow cake mix, but I used a pineapple cake mix from a box which saved me a ton of time, and it was delicious! I only had a cupcake pan, so I had to cut the pineapple rings to fit, if you have a jumbo muffin pan that works the best!
Ingredients:
Pineapple Cake Mix
1 cup Water
3 eggs
1/3 cup Oil
1/3 cup Butter, melted
2/3 cup Brown Sugar
2 cans Pineapple Rings
1 jar Maraschino Cherries
Instructions:
Preheat the oven to 350 degrees.
Combine the melted butter and brown sugar and mix until the sugar dissolves.
Spray your muffin pan, pour a spoonful of the brown sugar mixture into each mold, place a pineapple ring on top with a maraschino cheery in the middle.
Combine all the ingredients to make the cake batter, mix well and spoon the batter into each mold. fill about 2/3 of the way.
Bake for 20 to 25 minutes or until the tops have turned golden and a toothpick comes out clean.
Once down, pull them out and let them cool for 5 minutes. Loosen the edges if needed, then place a cookie sheet on top of the muffin pan and carefully flip them over so the mini cakes come out onto the cookie sheet and enjoy!
