Mochi Donuts

I've been wanting to try to make these for some time now. It just looks pretty intimidating, but I found an easy recipe on Pinterest. It came out great! It only makes 6, so it's a labor of love, but totally worth it. It's crispy on the outside and warm and chewy on the inside. We topped it with a sugar glaze, chocolate drizzle and some toppings! You can get creative if you want!


Ingredients:

1 1/4 cups Mochiko

1/4 cup Sugar

1 tsp Baking Powder

1/4 tsp Salt

1 tbsp Butter, room temperature

1/2 cup + 1 tbsp Hot Water

Vegetable oil for frying


For the glaze:

3/4 cup Powdered Sugar

3 tbsp Milk

1/8 tsp Vanilla Extract

Chocolate Drizzle (optional)

Sprinkles and crushed peanuts (optional)


Instructions:

  1. Add all ingredients in a large bowl, slowly add hot water and mix with a spatula until it's all combined.

  2. Cover the bowl with plastic wrap and let it rest for about 2 hours.

  3. Then divide the dough into 6 even pieces, and then divide each piece into 8 equal balls.

  4. Cut 6 - 4x4 inch parchment paper and place them on the counter. Start by forming your pon de ring shaped donuts on top of the parchment paper.

  5. Heat up the oil on medium low heat in a sauce pan and slowly add the donut, including the parchment paper to the oil and start frying until golden brown, you can remove the parchment paper with tongs after about a minute. Continue to flip the donuts so they don't burn.

  6. Transfer to a paper towel lined plate and repeat until all 6 are fried.

  7. Whisk together the ingredients to make the glaze and dip one side of the donut to coat, transfer to a cooling rack and let them set up for 20 minutes before drizzling your chocolate and toppings.
