Moroccan Beet Salad

What a simple, healthy and delicious dish! These were so good, even my husband said they were FIRE, and he's never had beets before. If you don't have the time to roast your own beets, you can get pre-cooked packaged ones from Trader Joes and it just got way easier!


Ingredients:

4 medium Beets

1/2 small Red Onion, sliced

1 tbsp fresh Lemon Juice

1 tsp Ground Cumin

1/2 tsp Coarse Salt

Black Pepper, to taste

11/2 tbsp Extra-Virgin Olive Oil

Fresh Mint, coarsely chopped

Fresh Italian Parsley, chopped

Fresh Basil, chopped


Instructions:

  1. Preheat the oven to 425 degrees.

  2. Wrap the beets in a double layer of foil and roast on a baking sheet for about 1 hour or until tender.

  3. While the beets are roasting, add your sliced red onions in a bowl with cold water, add 1/2 tsp of salt.

  4. In a small bowl, mix together the lemon juice, cumin, salt and olive oil and set aside.

  5. When the beets are done, let them cool for about 5-10 minutes or until they are cool enough to hold. Peel them and cut into small wedges.

  6. Toss the beets in the dressing, add in the drained red onions and mix well. Garnish with some black pepper, mint, parsley and basil!
