Oreo Cupcakes

The kids love Oreo's and cupcakes so we thought we would make some a share with our neighbors, spread a little love around these crazy times. Everyone enjoyed them, but how could you not smile with those 2 little girls handing you cupcakes!


Ingredients:

3/4 cup Granulated Sugar

6 tbsp Canola Oil

1/3 cup Sour Cream

1/2 tbsp Vanilla Extract

1 1/2 cups All-Purpose Flour

1 tsp Baking Powder

1/8 tsp Baking Soda

1/2 tsp Salt

1/3 cup Whole Milk, room temperature

3 large Egg Whites, room temperature

10 Oreos, broken into pieces

Vanilla Frosting + Crumbled Oreos


Instructions:

  1. Preheat oven to 350 degrees and line a 12 count muffin tin with paper liners.

  2. In a large bowl, combine sugar and oil and stir until well-combined. Add sour cream and vanilla extract, stir well.

  3. In a separate bowl whisk together flour, baking powder, baking soda, and salt.

  4. Mix the dry ingredients and milk to wet ingredients, stirring until just-combined.

  5. In a separate clean, dry bowl, use an electric mixer to beat your egg whites until you reach stiff peaks.

  6. Gently fold the egg whites into the batter with a spatula until completely combined.

  7. Stir in broken cookie pieces, then evenly divide cupcake batter into prepared pans, filling each liner 2/3 full. Bake for 15-17 minutes or until a toothpick inserted in the center comes out clean or with a few moist crumbs.

  8. Allow to cool completely in cupcake tin before removing and covering with frosting.
