Oxtail Pho

This always seems harder than it really is. I love the aroma when it's stewing in the kitchen. It's a little bit more costly to make compared to the chicken pho, but it's totally worth it. I like to add a little kick to it by adding in some instant beef flavor paste for boat noodle soup in my personal bowl, it's optional, but definitely takes it up a notch. I know you guys won't be disappointed.


Ingredients:

Broth:

1 package Oxtail Bone

1 package Beef Bone

Thinly Sliced Steak

Rice Noodles

Water

Jicama quartered

1/2 Yellow Onion

10 Cilantro (coriander) Stems

1 tbsp Salt

1 tbsp Fish Sauce

2 Celery Stalks cut in half

1 package Beef Balls


Garnish:

1 package Bean Sprout

1 bunch of Cilantro chopped

1 bunch of Green Onion chopped

3 Celery Stalks chopped

1 bunch of Thai Basil


Soup additions (based on your preference) Instant Beef Flavor Paste

Fish Sauce

Soy Sauce

Sriracha

Sugar

Black Pepper

White Pepper

Lemon

Pickled Jalapeno Peppers

Fried Garlic

Fried Chili Garlic


Instructions:

  1. Clean the oxtail and beef bones and place them into a large pot. Cover the bones with water (or as much broth you want to make), add in the jicama, half of a yellow onion, cilantro stems tied together, salt and fish sauce and boil for at least 1 hour. Continue to check on your broth and remove any foam that appear.

  2. While the broth is boiling, prepare your rice noodles. Cook according to package instructions and set aside.

  3. Soak the bean sprouts in cold water and chop all of the garnish vegetables and set aside.

  4. After the broth has been boiling for 1 hour, place in the beef balls, and celery stocks and continue to boil for another 20-30 minutes. After this your broth is ready, but the longer you boil the better the flavor.

  5. Once you are ready to assemble your bowl, add in your noodles, desired amount of garnish, and your slice beef. Pour the broth into your bowl and allow it to cook your sliced beef. You can also dip the beef into the boiling broth before you add it to you bowl if you want it well done.

  6. Spice up your bowl to your taste and enjoy! Don't forget to add in the beef balls and oxtail for an extra treat!
