This dish is always a crowd pleaser. It's great for potlucks! Super simple, I hope you guys enjoy it.
Ingredients:
1 (8 oz) package of Pancit Noodles
4 tbsp Veg. Oil
1 1/2 lbs of Chicken Breast cut into 1 inch pieces
4 Garlic Cloves minced
1 Onion sliced
2 Carrots chopped
2 Stalks of Celery chopped
1 can of Chicken Broth
4 tbsp Soy Sauce
1 tbsp Fish Sauce
1 tbsp Oyster Sauce
1 tsp Sugar
1 Lemon
Salt & Pepper to taste
4 Eggs boiled and sliced
Cilantro and Green Onion for garnish
Instructions:
Soak the pancit noodles in hot water to soften at least 15 minutes.
Heat up 2 tbsp of the Veg. Oil and cook the chicken and minced garlic for about 5 minutes. Season with salt and pepper. Remove from heat and set aside.
Heat up the rest of the Veg. Oil and saute the sliced onions until they become tender.
Add in the carrots and celery with a little bit of salt and pepper to taste, and cook until the veggies get soft
Next add in the chicken broth and let that come to a slow boil.
Throw in the chicken along with the noodles, Soy, Fish and Oyster sauce and sugar.
Squeeze the juice of the lemon on the noodles and mix.
Garnish with the eggs, cilantro and green onions.
I like to add crushed red peppers and sriracha for heat.
