Emily begs me to make this all the time, I try to reserve this as a weekend treat, because she eats so much of it. I have to hide them from her, or she can eat 4 or 5 of these in a sitting. These are great plain, but I'm sure you can jazz it up with syrup and fruit, but we typically just eat them plain.

Ingredients:
2 cups premix Pancake Flour
1 egg
1 can of Coconut Milk
2 tbsp Vegetable Oil
1/3 cup Sugar
1/2 tsp Pandan Extract
1/2 tsp Coconut Extract
1/4 cup shredded Coconuts
Instructions:
Combine all of the ingredients and mix thoroughly.
Let the batter sit for 30 minutes before you turn on the waffle iron.
Pour 1/3 cut of batter into each section and cook based on the waffle iron instructions. Repeat until your run out of batter.
Serve hot, you can snack on them all day, I typically just toss into the toaster oven to heat/toast a bit and it's amazing.
