Pandan Waffles

Emily begs me to make this all the time, I try to reserve this as a weekend treat, because she eats so much of it. I have to hide them from her, or she can eat 4 or 5 of these in a sitting. These are great plain, but I'm sure you can jazz it up with syrup and fruit, but we typically just eat them plain.


Ingredients:

2 cups premix Pancake Flour

1 egg

1 can of Coconut Milk

2 tbsp Vegetable Oil

1/3 cup Sugar

1/2 tsp Pandan Extract

1/2 tsp Coconut Extract

1/4 cup shredded Coconuts


Instructions:

  1. Combine all of the ingredients and mix thoroughly.

  2. Let the batter sit for 30 minutes before you turn on the waffle iron.

  3. Pour 1/3 cut of batter into each section and cook based on the waffle iron instructions. Repeat until your run out of batter.

  4. Serve hot, you can snack on them all day, I typically just toss into the toaster oven to heat/toast a bit and it's amazing.
