Peach Cobbler

Who doesn't love a good cobbler? Peach cobbler is my favorite. I had a bunch of canned peaches that needed to be used, what better way to use it right? I was a bit nervous since I was using canned peaches versus real peaches, but the outcome was DELICIOUS! I served this with vanilla ice cream and a caramel drizzle and everyone loved it.


Ingredients:


For the peach filling:

4 29oz cans Peaches

1 cup Granulated Sugar

1/3 cup All Purpose Flour

1/4 tsp Cinnamon

1/4 tsp Nutmeg

1/4 tsp Salt


For the cobbler topping:

2 1/2 cups All Purpose Flour

1 1/2 cups Granulated Sugar

1 tsp Salt

1 tsp Baking Powder

1/2 cup Buttermilk

1 Egg

1/2 cup cold butter, chopped into chunks

2 tbsp Sugar, granulated or raw sugar or both


Instructions:

  1. Drain the peaches for about 15 minutes and your peaches to a 9x13 inch casserole dish and top with 1 cup granulated sugar.

  2. Sprinkle the flour, cinnamon, nutmeg, and salt on the peaches. Gently stir the mixture together, being careful not to bruise and break the peaches. Set aside.

  3. Preheat your oven to 375 degrees.

  4. In a large bowl, add the dry ingredients: flour, sugar, salt, and 1 baking powder. Whisk it together.

  5. In a small bowl, whisk together egg and buttermilk. Pour it into the bowl with the flour, then use a pastry cutter to cut it into the flour, making a shaggy dough. Pour the flour mixture on top of the peaches and spread around evenly.

  6. Chop a stick of butter into 1/2 inch pieces. Scatter evenly over the top of the flour mixture. Sprinkle sugar over the top. I used half granulated sugar and half raw sugar to give it extra crunch.

  7. Bake for 45-55 minutes. The top should be turning light brown. Once it is light brown all over the top, turn on the broiler and broil the cobbler for 1-3 minutes. Keep an eye on it, you don't want to burn it.

  8. Let it cool for a bit and then serve with ice cream!
