Pear Gorgonzola Salad

This is one of my favorite salads. It goes great with pretty much any meal, or by itself! It's sweet and tangy and has a burst of flavor. I just love it! You can make the dressing or just buy the Pear Gorgonzola Salad Dressing, it is just as good! I didn't have any fresh pears so I used the sweet dried ones, but adding fresh ones take it to the next level!


Ingredients:

Baby Green Lettuce Mix

Baby Red Lettuce Mix

1 small Pear diced or a handful of Sweet Dried Pears

3 tbsp crumbled Gorgonzola or Feta Cheese

2 tbsp chopped Candied Almonds

Croutons


Dressing:

3 tbsp olive oil

1 1/2 tbsp Apple Cider Vinegar

1/2 tsp Honey

1/2 tsp Dijon Mustard

1/4 tsp Oregano

Salt and Pepper to taste

Squeeze of Lemon juice


Instructions:

  1. To make the salad dressing, add the olive oil, vinegar, honey, dijon mustard, and oregano to a small mixing bowl. Whisk ingredients together until well combined. Add a squeeze of lemon juice, if desired and salt and pepper to taste.

  2. Add the lettuce mix, pear, cheese, almonds and croutons to a large salad bowl.

  3. Drizzle some dressing on the salad and mix gently to coat. Add more if needed, serve immediately!
