Prime Rib Roast

Prime rib is one of my favorite type, but I rarely make it because it's so expensive and my family doesn't really eat rare - medium rare meat. It's criminal to have this well done! I use a garlic butter herb marinade for the meat and roast in the oven, you can smell it from the door, people walk in pretty much drooling. I recommend this for any special occasion, or when you can find it on sale. I served mine with green beans and potatoes but feel free to add any side you want.


Ingredients:

3-6 pounds Prime Rib boned and tied

1 cup Butter softened

6 cloves Garlic minced

1 tbsp Thyme finely chopped

1 tbsp Oregano finely chopped

1 tbsp Rosemary finely chopped

1 tbsp Salt

1 tbsp Black Pepper


Instructions:

  1. Leave the prime rib out on the counter top for 30 minutes to bring it to room temperature. Preheat the oven to 450 degrees.

  2. In a small bowl mix butter, garlic, thyme, oregano, rosemary, salt and pepper. Rub all of the butter on the outside of your prime rib and place in a roasting pan bone side down.

  3. Cook for 15 minutes and reduce the temperature to 325 degrees. It is about 15 minutes per pound of meat. Bake until it reaches an internal temperature of 110 degrees.

  4. Remove from oven and let it rest with foil for at least 20 minutes for medium rare.

  5. Carve it up and enjoy with any sides you like, trust me, anything will taste good with it.
