The kids love when we do these. They call it troll waffles or unicorn waffles. We like coconut waffles, so we use that recipe and just add colors, but you can use plain waffle mix (just follow the instructions) and add color to your batter for the same effect.

Ingredients:
2 cups premix Pancake Flour
1 Egg
1 can (13.5 oz) Coconut Milk or Coconut Cream if you want it a little more rich
2 tbsp Vegetable Oil
Cooking spray for the waffle iron
1/3 cup granulated white Sugar
1/2 tsp Vanilla Extract or Coconut Extract (Extra flavor & aroma use 1/2 tsp of both)
1/3 cup shredded Coconut (optional)
Red, Orange, Yellow, Green, Blue, Purple Food Coloring or Gel
Instructions:
In a large bowl, mix together premix pancake flour, egg, coconut milk, vegetable oil, sugar and extract until smooth. Let batter sit for 30 minutes before cooking. Mix in shredded coconut (optional) until combined.
Separate the batter into 6 different bowls and create your colors.
Preheat and grease waffle iron with cooking spray.
spoon in about 1 tbsp of each color batter onto the preheated waffle iron. Close lid and cook. Repeat and serve immediately. The girls like to dress them up with some whipped cream and sprinkles to be extra festive!
