On my quest for eating more fish this year, we found this yummy dish to try and recreate. It's got an awesome spice rub and a butter lime drizzling sauce. We roasted some asparagus too and served over rice and it was delish! Don't drizzle too much of the sauce, taste first, it is pretty tangy so don't over do it!
Ingredients:
2 Cod Fillets
1 tsp Paprika
1 tsp Dried Parsley
1/2 tsp Oregano
1/2 tsp Chili Powder
1/2 tsp Garlic Powder
1/4 tsp Cumin
1/4 tsp Salt
1/4 tsp Black Pepper
1/8 tsp Cayenne Pepper
2 tbsp Extra-Virgin Olive Oil, divided
1 tbsp Unsalted Butter
Zest and Juice of 2 Limes
Instructions:
In a small bowl combine all of the spices and mix well.
Using 1 tbsp of olive oil, brush the cod filets and then rub with the spice mixture. Let it marinate in the fridge for at least 30 minutes.
Preheat the oven to 450 degrees. Place the cod filets on a foil-lined baking sheet and roast in the oven for 10-12 minutes or until it's cooked through. I sprayed a little bit of cooking spray on the foil to make sure the cod doesn't stick.
While your fish is in the oven, melt the butter with the remaining tablespoon of olive oil in a small saucepan. Add in the lime zest and juice and mix.
Serve with your favorite sides and rice, and drizzle some of your butter lime sauce on top and enjoy!
