We had a few days of scheduled power outages, so we pretended like we were camping with the kids. We had a cool set up, lot of flashlights and shadow puppets, the camping lanterns and of course S'mores! These soft and chew cookies were a hit! SOOO GOOD!
Ingredients:
1 cup Salted Butter
3/4 cup Light Brown Sugar, packed
1/2 cup Granulated Sugar
2 large Eggs
1 tsp Vanilla Extract
2 1/2 cups All-Purpose Flour
2 tsp Cornstarch
1 tsp Baking Soda
1 tsp Salt
2 cups Mini Marshmallows, divided
2 cups Graham Crackers broken into small pieces, divided
1/2 cup Milk Chocolate Chips
1/2 cup Semi-Sweet Chocolate Chips
2 Hershey's Bars broken into pieces
Instructions:
Preheat oven to 375 degrees and line two baking sheets with parchment paper.
In a stand mixer, combine butter, brown sugar, and granulated sugar. Beat for 3 minutes.
Add eggs and vanilla and beat well until incorporated.
Add flour, cornstarch, baking soda, and salt, mixing just until combined.
Add 1 1/2 cups of the graham crackers, 1 1/2 cups of the marshmallows, milk chocolate chips, and semisweet chocolate chips, stirring them all together with a wooden spoon or large spatula.
Scoop 2-3 tbsp size balls of dough onto the parchment lined baking sheets, leaving room for the cookies to spread. Bake for 10 minutes, then remove from the oven and press some marshmallows, graham cracker pieces and Hershey pieces on top of each cookie.
And bake for another 1-2 minutes until done. Let them cool for 2-3 minutes on the pan before transferring to a wire cooling rack.
