Salt and Pepper Crab

I walked into Ranch 99 and saw a tank full of crab and had to have some! I usually do a crab boil but I wanted to try something different today. So happy I did! I steamed the crab but you can boil it too before you fry it, or you can buy the pre cooked ones to save some time. Either way you are in for a treat!


Ingredients:

2 Dungeness Crab

1/3 cup Cornstarch

2 Serrano Chili sliced

1 inch Ginger minced

6 Garlic cloves minced

3 Green Onions chopped

Salt and Pepper to taste

Oil for frying


Instructions:

  1. Set up your steamer, when the water boils add in your crab and steam for about 5-6 minuets.

  2. Once the crab has cooled, remove the body and clean out the shell of all the gills and crab butter, separate into smaller pieces, rinse and dry.

  3. Add the cornstarch and salt and pepper to taste in a ziplock bag, add the crab pieces and coat.

  4. Heat up a large wok with enough oil to fry, add in the crab in batches and fry for 5 minutes. Remove from the oil and set aside.

  5. Drain the oil and wipe down the wok, add in 3 tbsp of oil and saute the garlic and ginger until golden, add in the Serrano chili and continue to saute for a minute.

  6. Add in the crab, more salt and pepper to taste and the green onions and continue to stir fry for about 3 minutes. Transfer to a platter and serve!
