I was having another craving for Indian food and wanted to try this slow cooker recipe I read. I love anything in a crock pot because you kind of set it and forget it. We made some Naan from Trader Joes and it was perfect!
Ingredients:
1 lb Boneless Chicken Breast cut into cubes
2 tbsp Vegetable Oil
2 Medium Onion, finely chopped
1 tbsp Garlic, finely minced
1/2 tbsp Ginger, grated
2 tbsp Curry Powder
1/4 cup Tomato Paste
2 tsp Kashmiri Red Chili Powder
1 can Coconut Milk
Salt to taste
Cilantro to garnish
Instructions:
To make the curry base heat oil in a pan. Add finely chopped onions and cook on medium heat until the onion starts to soften and brown.
Add minced garlic and ginger and sauté for a minute.
Add curry powder to the pan and sauté for 30 seconds until aromatic. Keep stirring to avoid burning.
Add chicken to the crockpot, onion ginger garlic mixture, tomato paste, Kashmiri Chili powder, salt and coconut milk. Mix well and cook on high for 3 hours or on low for 5 hours.
Serve with rice, naan and sprinkle with cilantro!
