We call these crack cookies at my work. We can never get enough! The kids wanted to make cookies, and this is what they choose! Good thing I had all the ingredients at home, it was super simple and fast to make. The sprinkles spilled everywhere in the kitchen, so careful if you are having your little ones help! You can use any food coloring and sprinkles you want to decorate, we picked pink because it's their favorite color.
Ingredients:
Soft Cookie Dough:
1 cup unsalted Butter, softened
1 cup Sugar
1 tsp Vanilla Extract
1/2 tsp Almond Extract
2 Eggs
3 cup All-Purpose Flour
3 tsp Baking Powder
1 tsp Salt
1/2 cup Powdered Sugar
3 tbsp Milk
Buttercream Icing:
1 cup unsalted Butter, room temperature
4 cups Powdered Sugar
2 tsp Vanilla Extract
2 tbsp Milk
1-2 drops food coloring
Sprinkles
Instructions:
Pre-heat oven to 350 degrees and line a cookie sheet with parchment paper.
Add butter and sugar to a mixer and mix until slightly fluffy.
Add in the eggs, vanilla extract, and almond extract.
Place the flour, baking powder, salt, and powdered sugar in a large bowl. Whisk together until completely mixed.
Add half of the dry mixture to the batter and start to mix. Pour in the milk and the remaining dry ingredients and continue to mix until fully incorporated.
Take 1 tbsp of dough in your hands and flatten using the palm of your hand. Shape the dough until it is about 1/2 inch thick.
Bake the cookies for 9 minutes or until just slightly browned on the bottom.
To make the buttercream, add butter to a mixer and cream the butter until smooth.
Start to slowly add the powdered sugar 1 cup at a time. Place the vanilla extract, milk, and food coloring in the buttercream and mix until smooth.
Using a butter knife or a small spatula spread the buttercream onto cooled cookies. Sprinkle your cookies with your choice of sprinkles!
