When I was meal prepping, this was one of my favorite things to make. It's lean, it's delicious and made me feel like I was being "healthy". You can serve over white or brown rice, and of course extra sriracha sauce!
Ingredients:
1 lb. Green Beans 4 tsp Coconut Oil (or vegetable oil) 1 tbsp Sesame Oil 4 Garlic cloves, minced 2 tbsp Ginger, minced 1 lb. lean Ground Turkey 4 tbsp low sodium Soy Sauce 2 tbsp Rice Vinegar 2 tsp Asian Chili Garlic Paste
Instructions:
Preheat the oven to broil. Toss the green beans with half of the oil. Lay flat on a foil lined baking sheet. Broil for 6-8 minutes until tender and beginning to char.
Heat the remaining oil and sesame oil over medium high heat. Add the ground turkey, garlic, and ginger. Brown until turkey is fully cooked.
Add the green beans to the pan and stir. Then add the soy sauce, rice vinegar, and chili garlic paste. Cook for 1 minute. Taste and season with additional soy sauce and chili garlic paste if needed.
