Spinach Salad with Warm Bacon Dressing

Do you love bacon? Because this bacon dressing is BOMB. It was quick to make, the longest part was waiting for the eggs to boil! It was the perfect quick lunch, pretty healthy and hearty!


Ingredients:

1 tbsp Warm Bacon Grease reserved from cooked bacon

2 tbsp Apple Cider Vinegar

1 tbsp Dijon Mustard

1 tbsp Agave Syrup

1/2 tsp Pepper

8 ounces Spinach

5 slices Bacon, cooked and crumbled

3 Hard Boiled Eggs, sliced

1 small Red Onion, thinly sliced


Instructions:

  1. In a small bowl, add sliced red onion, cover with cold water and soak while you are preparing the rest of the salad.

  2. Pan fry your bacon until it's crispy. Remove bacon from frying pan and place on paper towel lined plate. Reserve 1 tablespoon bacon grease. Crumble bacon when cool enough to handle.

  3. Drain off water from red onions.

  4. Whisk together bacon grease, vinegar, mustard Agave syrup and pepper together.

  5. Toss spinach with cooked bacon, onions, hard boiled eggs, and dressing. Serve immediately. If the dressing starts to harden, microwave it for about 15 seconds.
