I found these pre-cooked pork belly at Costco and just had to try them. I decided to do a burger with them because we had so many buns that needed to be eaten, and let's be honest, pork belly burger just sounds amazing. This was a pretty easy recipe, I found it on Pinterest and of course made some modifications to fit my very limited time between work and homework! They came out great...but fair warning... I had a huge food coma after!
Ingredients:
1 package Pre-Cooked Pork Belly
1 tbsp Oil for frying
Salt and Pepper
3 tbsp Dark Soy Sauce
1 tsp Ginger, minced
1 Red Thai Chili, finely chopped
2 tbsp Honey
2 tbsp Brown Sugar
1 tsp Lemongrass Paste
4 Rolls/Buns
Lettuce
Red Pepper Flakes
Pickled Vegetables:
1/2 Cucumber
1 Red Onion
2 Carrots
1 1/2 Sugar
3 tsp Salt
3/4 cup Apple Cider Vinegar
1 1/2 cups Water
Instructions:
We are going to start with pickling the vegetables. Use a vegetable peeler to peel the cucumber and carrots into thin strips and place them in an airtight jar together.
Thinly slice the red onions and add this into a separate airtight jar.
Place the sugar, salt, apple cider vinegar and water in large bowl and mix together. Pour the mixture into the two jars, just enough to cover the vegetables, place the lid on an place in the refrigerator for at least 1 hour.
Add the oil to a large cast iron pan heat on medium-high.
Sprinkle the pork with salt and pepper and place into the pan until the pork starts to turn golden - about 5-6 minutes, make sure to flip the pork a few times.
While the pork is frying, mix together the glaze ingredients in a small bowl.
Once the pork is golden, drain some of the fat out of the pan and pour the glaze over the pork and continue to cook until the pork looks dark and sticky, then remove from heat.
Assemble your burger with 2-3 slices of pork, the pickled vegetables, lettuce and topped with jalapenos and chili flakes!
