Strawberry Cheesecake Cookie

This is one of my favorite flavor combos. Nothing like one of those ice cream bars on a hot day. This cookie is made with a cake mix base so its nice and soft. The cream cheese frosting and the cookie crumble just takes it over the top! This will be on our rotation for sure.


Ingredients: Strawberry Crunch Topping 1 cups Freeze Dried Strawberries 1 cup Golden Oreos

3 tbsp Butter


Strawberry Cookies

1 box Strawberry Cake Mix 1 cup All Purpose Flour

2 tbsp Cornstarch

1/2 cup Butter, softened

1/2 cup Butter Flavored Shortening

3 Eggs

1 tsp Vanilla Extract


Cream Cheese Frosting

8 oz. Cream Cheese, softened

1/4 cup Butter, softened

1/2 tbsp Vanilla Extract

4 cups Powdered Sugar

3 tbsp Milk


Instructions:

  1. Preheat the oven to 350 degrees and line 2 cookie sheets with parchment paper.

  2. Add Golden Oreos to a food processor and pulse until they turn into crumbs. Transfer to a bowl and pulse the freeze dried strawberries until it becomes a powder. Add the softened butter and work it into the ingredients until evenly coated.

  3. Combine the strawberry cake mix, flour and cornstarch in a stand mixer. Add the softened butter, shortening, eggs and vanilla extract to the dry mixture and cream together.

  4. Measure about 1/4 cup of the dough and form into a cookie shape. You can fit about 6 on a sheet. Bake for about 11-13 minutes or until the cookies are baked through. Remove from the oven and allow them to cool completely on the baking sheet.

  5. While the cookies are baking, start on the cream cheese frosting. In a stand mixer, combine cream cheese, softened butter, powdered sugar, vanilla extract. Add milk 1 tbsp at a time until you have a nice thick but spreadable frosting.

  6. Once the cookies are cooled, spread the frosting on top of each cookie and add the strawberry crunch topping to the top of each cookie.
