This is my NEW favorite desserts. Who would have thought a biscuit for dessert? I usually go with a pound cake or those little cake cups you get at Safeway, but I wanted to try biscuit, and let me tell you, it was pretty easy and it taste AMAZING. The whole house loved it.

Ingredients:
Shortcake Biscuit Dough:
1 1/2 cups All-Purpose Flour
1/4 cup Granulated Sugar
1 tsp Baking Powder
1/4 tsp Baking Soda
1/4 tsp Salt
1/3 cup Butter, cold
1/2 cup Yogurt, plain
3 tbs Milk
1 large Egg
1/2 tsp Vanilla Extract
Turbinado Sugar for sprinkling the top of shortcakes
Strawberry Filling:
1 lb Strawberries
2 tbsp Granulated Sugar
Whipped Cream:
1 cup Heavy Whipping Cream
2 tbsp Granulated Sugar
1/2 tsp Vanilla Extract
Instructions:
Wash the strawberries, cut the tops off and cut them into bite size pieces. Place them into a container with 2 tbsp of sugar, mix well and place in the fridge until you are ready to serve.
Preheat the oven to 400 degrees and prepare a baking sheet with parchment paper and set aside.
Add all your dry ingredients together and mix well.
Cube the butter and place it in the flour mixture. Coat them and rub in the butter until you get a crumble.
In a separate mixing bowl, add in the egg, milk, yogurt and vanilla extract and mix.
Make a well in the middle of the flour mixture, pour in the liquid mix and gently fold in the flour until its all combined.
Using an ice cream scoop to portion out your dough, it should make about 8 biscuits, and sprinkle with the turbinado sugar. Place in the oven and bake for 17-18 minutes. Remove from the oven and let cool.
Now make your whipped cream, use a chilled bowl ( you can place it in the freezer for 10 mins) add all the ingredients together and whip until little peaks start to form. You can do it by hand, but I recommend using a hand mixer to save your arms!
To assemble cut the biscuit in half, add desired amount of whipped cream and strawberries, top with the top section and enjoy!
