This is a recipe inspired by Chrissy Tiegen and her daughter Luna. I watched one of their cookie stories on Insta and thought it looked amazing. It literally took less than 10 minutes for this awesome dinner. If you like Salmon, you'll love this!

Ingredients:

3 - 4 skin-on Salmon Fillets

Salt and Black Pepper

2/3 cup Thai Sweet Chili Sauce

2 tbsp Sambal Oelek or Garlic Chili Sauce

2 tbsp Large-Grain Mustard

1/4 cup of Water

Instructions:

  1. Preheat the broiler on high.

  2. Season the salmon with salt and pepper on both sides

  3. In a small bowl combine the Thai sweet chili sauce, sambal and mustard. Pour the mixture into a large cast-iron skillet. Set the stove to medium-high and let it bubble up.

  4. Lay the salmon, skin side up in the sauce. Cook until the salmon starts to turn pink, roughly 2 minutes, then move the skillet into the oven and broil for 3 to 4 minutes.

  5. Remove the salmon from the oven and transfer the salmon to a serving platter.

  6. Return the skillet to the stove, add in the water and cook on high heat, stir and scrap all the bits until the sauce thickens, roughly 2 minutes. Pour the sauce over the salmon and serve! I added Lemon slices just for garnish.
