I had a huge bag of sweet potatoes that needed to be eaten, and I didn't know what to do with it! Should I make sweet potato fries, should I do a veggie bowl, or should I attempt a pie? I went for a pie, and so happy I did because it came out great! Not many ingredients and it was so easy. Definitely going to make this more often!

Ingredients:
1 lb Sweet Potatoes, baked and mashed
1/4 cup Butter Unsalted, room temperature
14 oz can Sweetened Condensed Milk
2 Eggs, lightly beaten with a fork
1 tsp Ground Cinnamon
1/2 tsp Ground Nutmeg
1 tsp Orange Zest
1 tsp Vanilla Extract
1 Pie shell 9 inch, Deep dish, Unbaked

Instructions:
Preheat the oven to 350 degrees, and bake your sweet potatoes for 1 hour.
Peel and mash the sweet potatoes in a large mixing bowl, add the butter, condensed milk and mix until smooth.
Add the eggs, cinnamon, nutmeg, orange zest, vanilla extract and mix until combined.
Pour the mixture in an unbaked pie shell. I bought the premade dough from the store and placed it into my pie pan.
Bake at 350 for 45 minutes or until the filling has set and the crust is golden.
Remove from the oven and let it cool completely, the filling may look puffed up but it will settle as it cools. Top with some whipped cream and enjoy!
