Tangerine Bundt Cake

My mother in law gave us a ton of tangerines from her neighbors tree. I didn't want them to go bad so I tried to make a cake out of it. IT CAME OUT AMAZING. The flavor is great, the cake is moist and the outer crust has a nice crunch to it. Taste great with your morning coffee or tea or for dessert with some ice cream!


Ingredients:

1 1/2 cup All-Purpose Flour

1 tsp Baking Powder

1/2 tsp Baking Soda

1/4 tsp Salt

1 1/4 cup Sugar

2 large Eggs

1 tsp Tangerine Zest

1/2 tsp Vanilla

1/2 cup Melted

1/3 cup fresh Tangerine Juice

2 tbsp Sour Cream


Instructions:

  1. Preheat the oven to 350 degrees. Grease and flour your bundt pan and set aside.

  2. Sift the flour, salt, baking powder, and baking soda. Add the tangerine zest and whisk together with the flour mixture, set aside.

  3. In a mixing bowl, add the eggs and sugar, beat well until fluffy. Add the melted butter, sour cream, tangerine juice, vanilla, and beat until well combined.

  4. Pour the batter into the bundt pan and bake for 25 minutes or until golden brown.

  5. Keep the cake in the pan for a few minutes and then flip on a cooling rack to completely cool.
