Tempura Shrimp Sushi Roll

I've always wanted to make sushi, but was always nervous to try. I ordered a sushi making kit on amazon for $9.99 and it worked out beautifully. You can make your own tempura, but to save time, Costco and Trader Joe's have premade ones you can just toss in the oven while you are prepping the other items. One tip I can give you, is use a very sharp knife to cut the sushi, or it all starts to fall apart!

Ingredients:

1 1/2 cup Sushi Rice

2 cups Water

1/4 cup Seasoned Rice Vinegar

6 pieces of Shrimp Tempura

1 8 oz Imitation Crab Sticks

2 tbsp Mayonnaise

1 Avocado ripened

1 English Cucumber

4 oz Cream Cheese

5 sheets toasted Nori Seaweed

Black and White Sesame Seeds

Bamboo Sushi Mat


Instructions:

  1. Cook the sushi rice with 2 cups of water. Once it's done, transfer it onto a large baking sheet. Using a rice paddle gently cut through the rice. Scoop the rice up and flip it over. Evenly drizzle the rice vinegar into the cooked rice and continue cutting and scooping the rice with the rice paddle until it cools down.

  2. While the rice is cooling, put the tempura in the oven and cook based on the package directions. Once the shrimps are done set them aside.

  3. Finely chop up the imitation crab and combine it with mayonnaise.

  4. Slice the avocado, and cut the cucumber into thin pieces. Using a sharp knife to cut the cream cheese into long strips. Then cut the tempura shrimp in half, lengthwise.

  5. Cover the sushi mat with plastic wrap and place one sheet of nori in the middle. Dip your hands in water and grab a handful of rice. Begin spreading the rice over the nori, making sure to cover the entire sheet with a thin layer.

  6. Once the rice is evenly spread, sprinkle some sesame seeds and flip the nori over. In the middle of the nori sheet, place the imitation crab, 2 slices of cucumber, 2 slices of avocado, 1 strip of cream cheese, and 2 tempura shrimp halves.

  7. While turning in the front of the nori with the sushi mat, slightly compress the inner ingredients. Keep rolling the sushi with the sushi mat, making sure to keep the roll tight.

  8. Using a sharp wet knife, cut each sushi roll into 8 equal pieces.
