Thai Chicken Larb

I really wanted something light and flavorful today, but didn't have much time between Zoom calls, so I went with Thai Chicken Larb. It's super easy and takes only about 15 minutes to make. You can eat it with Cabbage, in a wrap with Roman Lettuce or my favorite... STICKY RICE!!


Ingredients:

1 1/2 lbs ground Chicken

2/3 cups Fresh Lime Juice

3 tbsp Fish Sauce

1 tbsp Sugar

1 tbsp thinly sliced Thai Chilies

2 tbsp Chicken Broth

3/4 cups thinly sliced Red Onions

2 tbsp minced fresh lemongrass (or paste)

2 tbsp chopped Cilantro

15 leaves whole Mint









Instructions:

  1. In a skillet, over high heat, add the chicken broth and ground chicken. Stir continuously to prevent lumps. Cook for about 6 minutes or until the chicken is cooked through. Remove the chicken and set aside.

  2. In a medium bowl, mix the fish sauce, lime juice, sugar, red onions, chili pepper and lemongrass.

  3. If you have a mortar and pestle, add the chicken and mixture into the mortar and lightly pound and mix together. This will help break up the chicken and release all the juices. If not, mixing in a large bowl will work.

  4. Stir in fresh mint leaves and cilantro and serve!
