This is a refreshing and flavorful salad. It's super light and the sweet and tangy sauce is just want I need on a hot summer day. It's a great appetizer or side dish, but really, if you are like me you'll eat the whole thing as your lunch!
Ingredients:
Salad Dressing:
2 tbsp Lime Juice
2 tbsp Rice Vinegar
1 tbsp Peanut Oil
2 tsp Fish Sauce
1 1/2 tbsp Sugar
Cucumber Salad:
2 Cucumbers, thinly sliced
1/2 Red Onion, thinly sliced
1/2 tsp Crushed Red Pepper
1/2 tbsp minced Cilantro
1 tbsp chopped Peanuts
Instructions:
Prepare the salad dressing in a small bowl by combining lime juice, rice vinegar, peanut oil, fish sauce and sugar. Stir to dissolve the sugar, then set aside.
Place the sliced cucumbers and sliced red onion in a large bowl. Pour the salad dressing on top.
Add crushed red pepper to the salad, then toss gently, making sure that all of the cucumber slices are coated in the salad dressing. Stir the cucumbers a few times so they can marinate in the dressing.
Top with minced cilantro and chopped peanuts just before serving.
