I love a great baked potato, and I love loaded mashed potatoes, this is a perfect blend of both! This is a great side for any BBQ, and a total crowd pleaser. One time I made these and our buddy John said "These are like deviled eggs, but potatoes!" I thought that was the funniest thing, but pretty accurate. You can add anything you like to these, but this recipe is my go to.

Ingredients:
6 Russet Potatoes
Olive Oil drizzle
Sea Salt to taste
1/4 cup Milk
1/2 cup of Shredded Cheese
1/4 cup Sour Cream
2 tbsp Butter
1 tsp Garlic Powder
1 tsp Onion Powder
1 tsp Paprika
Salt and Pepper to taste
Green Onion chopped
Chives chopped
Crispy Bacon
Instructions:
Wash the potatoes, place on a cookie sheet and drizzle with oil oil and seat salt.
Place into an oven and bake at 375 degrees for 1 hour.
Let the potatoes cool for about 5 mins and split the potatoes in half, scoop the inside of the potatoes out and place into a mixing bowl.
Add in all the ingredients but leave some cheese, green onion and bacon for the toppings. Mash all the ingredients together.
Scoop the mashed potato mix back into the skins. Top with more bacon, onions and cheese and place back into the oven and cook for an additional 15 minutes.
Serve with more sour cream if you like, and enjoy!
