Ube Mochi Waffles

My littlest daughter calls these purple waffles. She kinda has a waffle obsession. These are crispy on the outside and chewy on the inside. If you want to kick it up a notch I would add in 1/4 cup of shredded coconut. I hope you guys enjoy!


Ingredients:

1 cup All-Purpose Flour

1 1/2 cups Sweet Rice Flour

1/4 tsp Salt

2 tbsp Granulated Sugar

2 1/2 tsp Baking Powder

1/2 tsp Baking Soda

1 Egg, large

1 cup Ube Halaya

1 1/4 cups Whole Milk

1/3 cup Sweetened Condensed Milk

1 tsp Ube Extract

3 tbsp Unsalted Butter, melted


Instructions:

  1. Mix the all-purpose flour, sweet rice flour, salt, granulated sugar, baking powder, and baking soda in a medium bowl until fully combined. Set aside.

  2. In a separate bowl, mix the egg, ube halaya, whole milk, condensed milk, ube extract, and melted butter until fully combined.

  3. Pour the wet mixture into the dry mixture until the batter is smooth.

  4. Lightly spray your waffle iron with cooking spray and pour the batter in each section based on your waffle iron.

  5. Close the waffle iron and cook on medium heat based on your waffle iron.
