White Chocolate Macadamia Nut Cookie

These have to be one of my favorite type of cookies. I'm not even big on white chocolate, but paired with macadamia nut.. I just can't resist!


Ingredients:

1/2 cup Butter, room temperature

1/2 cup Light Brown Sugar

1/4 cup White Sugar

1 Egg

1 tsp Vanilla Extract

11/4 cups All-Purpose Flour

1/2 tsp Baking Soda

1/4 tsp Salt

1 cup White Chocolate Chips

1 cup Macadamia Nuts, chopped


Instructions:

  1. In a stand mixer, combine butter and sugars and beat until light and fluffy. Add egg and vanilla until well combined.

  2. On low speed add flour, baking soda, and salt to butter-sugar mixture. Stir in chocolate chips and nuts.

  3. Preheat the oven to 350 degrees, line a cookie sheet with parchment paper and set aside.

  4. Scoop the dough using a 1-1/2 tbsp scoop, place dough onto baking sheet, making sure it's 2 inches apart and place in the freezer for 30 minutes.

  5. Remove from the freezer and bake for about 15 minutes or until edges are lightly browned. Allow cookies to cool slightly before transferring them to a cooling rack.
