This is one of my favorite snacks. It's an instant noddle salad - Lao Style. Mama noodles bring me back to when I was a kid. I used to bring them to school and eat them as a crunchy snack with the seasoning packets. My friends used to buy them from me for a $1. Now that I'm older and can cook, I like to make this salad. It's such a burst of flavor, just typing this makes me want to go make it! You can add cooked shrimp to this to add protein, it takes it to the next level.
Ingredients:
2 packages of Mama Noodles
1 packet Seasoning from the Noodles
Handful of Long Green Beans, chopped
3 Thai Chilis (more or less depending on spice level)
3 cloves of Garlic
1 tbsp Shrimp Paste
1 tbsp of Fish Sauce
2 tbsp of Sugar
12 Cherry Tomatoes halved
1/2 of juice of lime
Instructions:
Boil the instant noodles for just 3 minutes or till al dente.
Use a pestle and mortar or food processor to make the sauce! Pound together chilies, garlic, shrimp paste, fish sauce, sugar, tomatoes, lime juice and 1 seasoning packet.
Add in the long green beans into the pestle and mortar and lightly pound.
Pour sauce and green beans into a large bowl and add in the noodles, mix well and enjoy!
