Yum Woon Sen

This is a Thai glass noodle salad with yummy minced meat and shrimp. It's super simple, packed with flavor and the fresh veggies just makes it such a satisfying dish. The dressing is refreshing and not too spicy, if you want some heat I would add more peppers, but the recipe as is is perfect!


Ingredients:

4 oz dried Bean Thread Noodles

1/2 lb Ground Chicken (Pork or Turkey would work)

1/4 lb Shrimp, peeled

1/2 small Red Onion, sliced

1/4 cup Green Onions, sliced

1/4 cup Cilantro, sliced

1/4 cup Mint


Dressing:

3 tbsp Fish Sauce

3 tbsp Lime Juice

2 tbsp Sugar

1 long Red Chili Pepper


Instructions:

  1. Soak the noodles in room water for 5 minutes or until softened slightly.

  2. Use a mortar and pestle to pound the red chili into a rough paste. Add in the fish sauce, lime juice and sugar and mix and set aside.

  3. Place the soaked noodles in a sieve and dip it in boiling water for 2 minutes or until softened and cooked through. Remove noodles from the water and place in a large bowl.

  4. Add ground meat into the sieve and cook in the same boiling water until it is cooked through. Drain the meat and add it to the bowl with the noodles.

  5. Repeat this process with the shrimp.

  6. Add the dressing and veggies and toss until well combined and serve!
